Leg of lamb in a herb crust
Trim the leg of lamb. Cut the vegetables into walnut-sized pieces. Season the meat with salt, pepper and fennel seeds and sear it all over.
Add the vegetables and roast them with the meat. Slake with the red wine and place everything in a roasting tin.
Cover the leg with the herbs the bruised cloves of garlic and the chili and drizzle with a little olive oil. Then cook the leg in the oven for about 5 hours at 80°C. To make the crust, finely dice the white bread.
Mix herbs in the cutter with garlic, diced bread, and a little olive oil to make a loose crust. Lightly season with salt and pepper to taste. As soon as the lamb is done, coat it with a little mustard and roll it in the crust mixture.
Enhance with a little lemon zest and gratinate it briefly in the oven at high top heat.
