Storage:

  • Store whole peppercorns in a sealed container in a cool, dry place up to one year. If stored properly, peppercorns can last up to three years.

Portioning:

  • 1 teaspoon (5 mL) of peppercorns = 1 1/2 teaspoons (7 mL) of ground pepper.

How to use when cooking:

  • If you are using ground pepper in cooking, you should add it in the end of the cooking process, in order to get the most out of the flavor out of it. If you are cooking a dish which is light in color, use white pepper to make sure your color of your dish will remain the same color.

Fresh Hollandaise Sauce

First clarify the butter. To do this, carefully heat the butter in a saucepan and leave it to boil for about 30 minutes.

The congealed protein solids will be deposited in the foam and on the bottom, while the water will evaporate. Using a skimmer, carefully skim off the foam and strain the remaining butter through a cloth.

Finely chop the shallots, crush the pepper corns, add white wine vinegar, white wine and half the quantity of water and reduce almost completely.

Add the remaining water to the reduction, lightly salt it and strain it through a cloth. Beat the strained reduction together with the egg yolk to a creamy consistency in the bain-marie. Then whisk the clarified butter (temperature 45°C) into the egg yolk mixture in a slow, steady stream.

Season sauce with salt, white pepper and a little lemon juice to taste.
