Recipe Recommendation

Stuffed breast of veal

For the stuffing, coarsely chop the walnuts and lightly roast them in a pan.

Dice the onions and braise them in a little butter until translucent. Slake with the milk and heat them up.

Finely dice the white bread, give it into the pan and remove it from the hotplate. Add the walnuts and the cranberries.

Enhance with chopped parsley and the mustard. Stir in the egg and season the whole dish with salt, pepper and ground nutmeg. 

Spread the breast of veal out flat and season it with salt and pepper.

Then generously cover the meat with the stuffing and roll the veal breast up tight. Fasten this roll with a piece of twine.

Now sharply sear the breast of veal. Dice the root vegetable, lightly roast in the same pan and pour the veal stock over them.

Place everything in a roasting pan and cook it in an oven for about two hours at 160°C until tender.
To serve, slice stuffed breast of veal.
