Indian Lentil Stew

Chop up the garlic and ginger. Cut the spring onions into rings and dice the sweet peppers. Toast the curry powder and mustard seeds in a heated saucepan. Add oil, garlic and ginger and briefly braise them. Add the lentils and diced peppers and briefly braise them, too.

Slake everything with the vegetable broth and bring it to boil. Add tomatoes and coconut milk and simmer everything for 15 to 20 minutes on low heat until the lentils are soft. Mix in the spring onion and add salt and pepper to taste. 

Serve wish freshly baked poppadom and crème fraiche.
