Storage:

Store coriander in a cool, dark place. Buy the amount that you think you will be able to use within one year for whole seeds and six months for ground coriander.
Portioning:

1 teaspoon ground coriander = 1 teaspoon of whole coriander seeds.
How to use when cooking:

Coriander is best added to dishes just before serving for maximum flavour.
Coriander powder is put in to give the dish a citrus-like taste. The taste of the coriander also helps blend the tastes of all other spices that are added to the dish.

Raw-Marinated Tuna
Remove any tendons from the tuna and cut it into strands about 3 cm in diameter. Grind the five spice mixture small in a mortar. Chop the herbs up small where necessary and mix them together.
Season the tuna with salt and pepper, toss it in the spice mixture and sprinkle it lightly with curry and lemon zest. Sear the fish pieces with a little oil. Then toss them well in the chopped herbs.
Cover them with foil and leave them to stand in the refrigerator for several hours. Serve in thin slices.
